World cuisines in the 9th edition of Ibiza Gastronomic Heritage

Menús Ibiza Patrimonio Gastronómico 2020

Until the 29th of March, a dozen restaurants on Ibiza will be preparing special menus and typical dishes from World Heritage cities or countries. Read on to find out what proposals are on offer and where you can try them.

The competition, which this year is celebrating its ninth edition, aims to pay tribute to the different places in the world to which UNESCO has awarded this title (such as the island of Eivissa). The menus will consist of starter, main course and dessert (20 euros drinks not included).

We leave you with the list of establishments that offer them and at the end of the article a brochure that includes a map to easily locate them:

1) Bambú Viet Food

Here we find a reinterpretation of traditional Vietnamese cuisine, inspired by the ancestry of chef Frank Grizard, who runs Bamboo Viet Food.

The menu includes Banh cuon (pork ravioli and steamed mushrooms) or Cha Gio (fried rolls), Thit Nuong (pork skewers) or Pho Dau Phu (tofu noodles) and Che Bap (coconut corn jam).

2) Ca'n Alfredo

Chef Pepe Torres is an expert on Ibiza's local gastronomy and products and has prepared a delicious menu to make you feel at home in Ca'n Alfredo.

You can choose from Onion Soup au Gratin or Beans Ibiza Style, Red Mullet Fillets with Romesco Sauce or Pig's trotters stuffed with Milk Truffles and Fig Pudding with Apricot Ice Cream or Semifreddo with Cheese, Pumpkin and Carrot.

3) Casa Maca

The essence of Peruvian cuisine from Colombian chef Alvaro David Ospina arrives at one of Ibiza's trendiest venues, Casa Maca.

Sea bass ceviche or Causa limeña with octopus make up the starters, while Lomo salteado and Ají de gallina are the main ones. For dessert, Suspiro Limeño.

4) Can Moreta

Nieves Ramon, a veteran of traditional Ibizan cuisine, brings on this occasion typical Mallorcan dishes on the menu for Can Moreta.

You can try Sopas Mallorquinas or Caracoles con rib y allioli, Lomo con col or Bacalao con tumbet y Gató or Greixonera de brossat.

5) Ebusus CbBc

The chef of CbBc, Blas Hidalgo Bonet, will make us travel to Córdoba with a succulent proposal that you can taste in Ebusus.

The menu includes Alcachofas al Moriles with Iberian ham from the Pedroches valley or Patatas cortijeras with chorizo, Carrillera de cerdo a la cordobesa or Monkfish Mozarabic style and Pastel cordobés with angel hair and cinnamon or Espuma de pestiños with cinnamon crunch.

6) Hotel Pachá

From Pacha to Mexico, with chef Dario Zoldan! The restaurant director of the famous cherry company has prepared a very interesting menu.

Quesadilla with onions, corn and coriander, Nachos with chopped beef, avocado and pico de gallo and Banana flambé with mezcal and vanilla ice cream make up the menu.

7) Es Mercat

Market cuisine has two basic characteristics: quality and proximity. This is why Emiliano Cruceli and Nicolly Trankels have chosen Ibizan products for the Es Mercat menu.

Delight yourself with "Coca de escalivada" with rosemary cheese or sautéed red Ibizan prawns, "Calamar a la bruta" or creamy rice of country chicken with sobrassada and parmesan cheese, and homemade "Torrija" in Ibizan orange and port marinade.

8) It Ibiza

Massimo Larosa cooked for over five years in Ischia with chef Nino di Costanzo (two Michelin stars). Now he's in love with Ibiza's cuisine.

That's why It Ibiza proposes a menu composed of crunchy Gerrets with lemon or Warm vegetable soup from our garden, Tagliatelle with ragout of rotja and almonds or Country Chicken with smoked corn and black garlic and Millefeuilles of white chocolate and herbs or Caramelized almond cake.

9) La CAva

If you like Israeli cuisine, you will like the menu that chef Elizabeth Maldonado has prepared for the restaurant La Cava.

As a starter we have Hummus with pine nuts or Falafel (served with homemade pita bread and za'atar), main course chicken Shawarma with aubergines or Pashtida Tered (chard and cheese empanada) and chocolate Babia.

10) Los Molinos

The French chef Marc Anchierri presents what he conceives as "international cuisine with a Mediterranean trend" for his menu at Los Molinos.

Eggplant, tomato and Greek cheese millefeuilles or fresh and smoked salmon textures are the options for the starter, Hake loin with chorizo risotto or Lamb confit in a couscous style are the suggestions for the main course and, for dessert, Tiramisu or Lemon meringue pie.

11) Sa Nansa

Ibizan seafood cuisine, the speciality of Pedro Tur, head chef at Sa Nansa. This is what we found in the proposal for this competition.

So, you can try Marinated Red Tuna or Sautéed Squid with Sobrasada and Ratjada Burrida or Rice with Gerret and Cauliflower. The dessert is a typical Greixonera.
