Book Ibiza from the land to the table

Journalist Marta Torres Molina, naturologist Josep Coloques Garrido and photographer Toni Escobar Cardona presented the book "Ibiza, de la tierra a la mesa" (Ibiza, from the land to the table) on 12th July. The publication aims to be a guide "to get the most out of vegetables, fruit, aromatic plants and spices, for the body and the palate", in the words of its editor, Neus Escandell.

The presentation of the book took place at the Club Diario de Ibiza, where the attendees were able to chat with the creators of this interesting project. Colonques and Escobar emphasise that it will appeal "to cooks and plant lovers alike because it is a fusion of botany and gastronomy". Without going any further, among its pages you can "learn how to make dishes as simple and original as avocado tempura with quicos mayonnaise or discover why the Aztecs considered the fruit of the avocado tree to be a powerful aphrodisiac", as they point out in a report in Diario de Ibiza.

Recipes with local products

Ibiza, de la tierra a la mesa is a book that includes more than 70 recipes and information on dozens of local products. These, according to the author of the recipes (journalist Marta Torres), are preferably bought in local markets such as the Mercat Nou de Vila. Several of them are, as Torres confesses, "family heirlooms". One example is her grandmother Paca's papajotes, "a kind of cod fritters typical of Easter".

Starters, main courses and desserts. All of these dishes have a deep flavour of Ibiza, a deep flavour of Mediterranean and traditional gastronomy. One detail to bear in mind is that Ibiza, de la tierra a la mesa is a book that does not require a great deal of knowledge behind the cooker. "Most of them are simple dishes that require no more than a stove, oven, fridge and, at most, a mixer," the Ibizan newspaper writes.

Creativity in recipes and photographs

The creativity of Ibiza, de la tierra a la mesa is not only in the recipes shared in the book. It also stands out in the photographs. Toni Escobar, the man in charge of taking them, confesses that he has tried to "play with and move away from the typical aesthetics of cookbooks". In this sense, the exteriors of traditional estates such as Ca n'Armat or Can Puvil take on special importance and prominence, creating an ideal backdrop for the images.

The most complicated part of this project? "Dealing with the weather," Escobar explained to his audience at Club Diario de Ibiza. This past winter has been exceptionally adverse and has not made it easy to photograph the food. For his part, Torres highlighted the difficulty of the process of "cooking, transporting and plating" the products so that they "look perfect" in the images and in the final publication.

The publication has been available since 8 July 2022 and can be purchased in bookshops on the island. The publisher of the book Ibiza, de la tierra a la mesa (Neus Escandell) announced that it will also be taken to the rest of the Balearic Islands and Barcelona, and that there will be one edition in Spanish and another in Catalan.
